Paquito el Chocolatero

The son of composer Gustavo Pascual Falco has launched, in collaboration with the winery Celler la Muntanya, a red wine which pays homage to the figure of his father and, in general, to the music of popular bands. The initiative is set up as a tribute to the components of the bands which, in turn, are engaged in agriculture.

VINEYARDS SITUATION:
Municipalities of Beniarrés, Alcocer de Planes, Alcoy, Tibi, Cocentaina, Gorga, Sax and Muro.

VARIETIES:
50% Monastrell / 25% Giró (Garnatxa del país) and 25% Garnatxa Tintorera.

VINIFICACIÓN:
The grape harvest was hand-made, with die-cut boxes of 12 kg, after a special processing of the vines. At the beginning of September, the Garnatxa Tintorera was harvested, then the Giró and the Monastrell took some time more, until October. The grape, inside the boxes, stayed in a cold-storage room for 5 days at 5’5 degrees. We removed the stalks from the grapes and the juice was poured into inox casks of 2,000 litres. They were placed on the top where a previous cold maceration was made. The fermentation-maceration lasted about 15 days at 28-30ºC. All varieties were fermented separately. The Garnatxa Tintorera was fermented in an oak French cask of 40 hl.

AGING:
The Garnatxa Tintorera grew up on fine lees in an oak Frech cask of 40 hl for 6 months. The Monastrell grew up on fine lees in an inox cask. The Giró however grew up in worn oak French casks (second and third year) of 500 litres for 6 months.
