It is the honey that combines "honeydew" with the nectar of other flowers, such as the substance secreted by oaks, cork oaks and holm oaks, since in many regions these trees coexist and the bees visit them at the same time.
Therefore, technically, it is not considered as a honey since it does not proceed as usual from the nectar of flowers, but from the exudation of holm oaks, cork oak and oaks, which generate a very high production of sap rich in sugars.
By having excess sap the trees are detached from it by exuding it through its bark. Then the bees collect this sap and elaborate forest honey.

In mid-August and the end of September, adequate humidity is given so that these trees segregate this type of honeydew.
It is usually dark amber, almost black when it is liquid.Acquire brown tones when it crystallizes.  The dark color is provided by mineral substances in very small amounts such as manganese, zinc, iron or copper.
The forest honey is not as sweet as the honeys of floral origin, but they have a stronger and denser flavor,sweet, but with a clear salty component that prevents it from being cloying.
In the mouth, this honey creates woody and soft sensations, with notes of licorice or mint. Its aroma reminds of the dry leaves of the forest.
