Bees begin to produce thyme honey with the start of summer, at the end of June, and conclude their process in mid-July. Its color is rather clear amber type when it is liquid, but darkens reaching brown tones at the time it crystallizes.
Its flavor is very sweet, but delicate at the same time, with clear acid notes, sometimes very persistent. May have slight salty notes. It is the taste of many fans of natural honey.
